I was waiting for someone to bring up Tim "Herb" Alexander, so thanks Megagreg. The guy's amazing, and I believe, ended up leaving Primus when the band got away from the music and got so focused on the weirdness that is Primus today. The first few albums are fantastic. Check out the song Jellikit for a great solo. Also, here's a clip of some of his solos from a 2006 tour.

Stewart Copeland should also be on that list. The Police albums don't do him justice. I saw them live a couple months back and his performance blew me away.
Lastly, while not the flashiest drummer, I'd have to say Chad Smith from Red Hot Chili Peppers brings a groove to the band that makes their music, especially on Blood Sugar Sex Magik.

I have to say that Carter Beauford is high on my list because of precision.
Also, for no real reason I've always liked Ginger Baker.
Keith Knudsen of the Doobies isn't so bad either...he also had the vocals to complete the package. And he was a nice and down to earth person to boot.
Lastly, as much of a douche as he is, Lars Ulrich is damn good at what he does. (No I'm not talking about complaining, I mean playing drums)
