when I lived in Alaska, we would go to Seward every summer and catch salmon and smoke em. I have a pit in my backyard that I cure and smoke my meats

my grandparents had a smoke house. all they ever smoked was sausage, but it was pretty bad ass.

I had one, smoked mostly deer and other varmints in there. But it became too much to keep up so I went with the deep pit
