Medium rare, bloody is how I like my steaks. Most places will cook that, but 30 seconds on each side sounds really really rare. I'm surprised they would cook that considering most health code require a certain temperature for meat and I thought medium rare was pretty close to the line.

most high end steakhouses will cook you a 'blue' steak which is seared on the outside with a cold rare center.

you are correct sir. They also have Black and blue which is burnt on the outside and raw on the inside.
I like my steak black on the outside and med rare on the inside. Love that crispy charcoal burnt flavor.

True dat. Ruth's Chris is a pretty high end joint so I guess they know what they can or can't do. I ask for just past rare (my earlier 30 sec) and it comes out perfect, knife goes in, a little blood comes out.

Steak for dinner tomorrow for sure. I think I will go with a skirt steak. Skirts are great on the grill with some BBQ sauce.
