Garlic and Rosemary Chicken

This is EASY, fool proof, and it is SOOOO good.

You Need:

1 Package Boneless Skinless Chicken Thighs
About a half a head of garlic, crushed or chopped finely
2 Tablespoons Dried Rosemary
1 Bottle White Wine
Salt and Pepper
Olive Oil

1) Get a Frying pan fairly hot and put enough oil into coat the bottom of the pan Salt and Pepper the Chicken on both sides. Braise each side of the chicken, about a minute on each side.

2) Pour in about half the bottle of wine, the garlic and rosemary. Reduce the heat to med low

3) Drink the bottle of wine while the chicken simmers and the wine cooks down (about 8-10 min)

4) You can do one of two things here, you can let the wine reduce until it becomes sort of a sauce on top of the chicken, OR, you can cook it right down until the chicken gets crispy. Usually you DONT cook anything with garlic down that much (it burns) but with this recipe it works splendidly!!

You can serve this with pasta, veggies or even just potatoes on the side.

General Tso's Chicken - Awesome Asian Dish


You need:

3 lbs boneless skinless chicken breasts, cut into chunks
2 cups green onions, sliced
8 small dried chilies, seeds removed (chile pequin, bird's eye, etc..)

Cornstarch Batter
1/4 cup soy sauce
1 egg, beaten
1 cup cornstarch

Sauce
1/2 cup cornstarch
1/4 cup water
1 1/2 teaspoons fresh garlic, minced
3/4 cup sugar
1/2 cup soy sauce
1/4 cup white vinegar
1/4 cup sherry wine or white wine
14 1/2 ounces chicken broth (a can)



1.Place Sauce ingredients in a quart jar with a lid and shake to mix. If you make this ahead of time just refrigerate until needed, shaking it again when you are ready to use it.

2.Mix cornstarch batter in a large bowl- the mixture will be weird consistancy - Don't worry!!! . Add chicken pieces and get them coated well. Using a fork remove ONE chicken piece at a time and let the excess mixture drip off. Add it to the hot (350 degree) oil and fry until crispy. Only cook 7 or 8 chicken pieces at a time.

3.Drain on paper towels. Repeating until all chicken is fried.

4.In a separate wok or large skillet add a small amount of oil and heat to 400 degrees.

5.Add green onions and hot peppers and stir fry about 30 seconds.

6.Stir sauce mixture, and then add to pan with onions and peppers, cook until thick. If it gets too thick, add a little water.

7.Add chicken to sauce in wok, and cook until all is hot and bubbly.

8.Serve over rice.

YUM!!! i love general tso's chicken. i like to consider myself a foodie. here's a new one i tried that was pretty tasty:

Broccoli Cole Slaw

2 pkgs. oriental flavor noodles
3/4 stick butter
1/4 c slivered almonds
2 bags broccoli slaw mix
1/4 c sunflower seeds
green onion for garnish

dressing:

3/4 c canola oil
1/4 c brown sugar
1/4 apple cider vinegar

melt butter in skillet. add crushed noodles and almonds. meanwhile stir together dressing ingredients. put broccoli mix in a bown and add the butter and almonds. toss with dressing and sunflower seeds. garnish with the chopped green onion.

it's different but it's good.
