Actually I would have to disagree. The tuna in supermarket sushi is a product preserved with filtered smoke and frozen, which is why it is so purple. The crab is usually treated pollack and the salmon is definitely farmed.
Also, there is an amazing difference in how the rice is made at a good sushi house and the local Safeway. Add to that sushi rice in a restaurant is served warm and in the store it is all cold.
This is not to say that I don't enjoy a pack of sushi from the local store now and then, but I would never confuse it with the amazing goods my sushi chef makes when we go there.
