This recipe for baked potato soup is really good...it's takes a while to make, but it's worth it and there's usually plenty of leftovers with just the 3 of us.

2/3 c. butter
2/3 c. flour
7 c. milk
4 large baking potatoes - baked, peeled, and cubed (about 4 cups) *I like to use more potatoes for a thicker soup
4 green onions, thinly sliced
10 to 12 strips bacon - cooked, drained and crumbled
1 1/4 c. shredded mild cheddar cheese
1 c. sour cream
3/4 teaspoon salt
1/2 teaspoon pepper

Melt butter in large stock pot over low heat. Stir in flour until smooth and bubbly. Gradually add mild, stirring constantly until it begins to thicken. Add potatoes and onions. Continue to cook on medium-low heat stirring constantly until soup begins to bubble. Reduce heat; simmer for 10 minutes. Add remaining ingredients and stir until cheese is melted. Ready to eat!
